Simple Chicken Pie

Feeds 2-3 people


3 Sheets of puff pastry

1 Chicken breast (boiled and then stripped)

1 tablespoon butter

1/2 onion (finely chopped)

Small can of corn

Small can of mushroom

300ml cream

Salt and pepper


Preheat oven to 180 degrees.

Saute onions in the butter until caramelised.

Stir the vegetables in for a few minutes then add the cream and keep stirring until thickened and boiled.

Add the chicken strips and season with salt pepper. Stir until combined then chill for 10 minutes.

While mixture is chilling, cut the pastry into quarters (4) and lay them in a muffin pan.

Finally add the chicken mixture into the pastry and seal and off into the oven.

Bake for 30-40 minutes.
