Frost the cupcake with white frosting; roll the edge in clear sugar crystals. Pipe orange frosting in the shape of a peach on top of the cupcake; sprinkle the peach with red and yellow sugar crystals. Attach a small piece of chewy chocolate taffy for the stem and green spearmint leaf for the leaf.
