- 1 cup(s) pearl barley
- 12 ounce(s) (about 3 cups) cherries, pitted and chopped
- 3 stalk(s) celery
- 1/4cup(s) chopped fresh mint leaves
- 2 tablespoon(s) cider vinegar
- 1/2teaspoon(s) salt
- Cook pearl barley as label directs. Drain, rinse until cool, and drain again.
- Toss barley with cherries, celery, fresh mint leaves, cider vinegar, and salt until mixed. Place in lettuce-lined bowl.
