Bakers Custard


375 ml (1½ cups) milk
75 ml (5 Tbsp) sugar
30 ml (2 Tbsp) cake flour
20 ml (4 tsp) maizena
2 eggs
2 egg yolks
5 ml (1 tsp) vanilla essence


Bring 300ml of milk to a boil.

Mix sugar, flour and maizena to a paste with 75ml milk

Add flour paste to hot milk and stir.

Remove from stove.

Beat eggs and egg yolks and gradually add this to the warm milk mixture.

Return to stove and stir continuously until mix-ture thickens.

Add vanilla essence.
