- 3/4 cup raw, white rice, uncooked
- 5 cups whole milk
- 3/4 cup dates, finely chopped
- 1/2 cup dark brown sugar
- 1/2 teaspoon cinnamon
- 1 1/2 teaspoons vanilla
- 1/2 teaspoon salt
- 3 tablespoons buter
Grease a 2 quart casserole dish with butter or non-stick cooking spray.
Combine rice, brown sugar, cinnamon, and salt in casserole dish. Pour in milk and vanilla. Stir well.
Evenly drop small dollaps of butter over mixture. Place in oven and cook for approximately one hour, stirring occasionally.
Gently stir in dates and allow to cook one more hour, stirring occasionally, until rice is tender.
Remove from oven and allow to cool. May be served warm or chilled.
