Asian Beef Pot Roast

Asian Beef Pot Roast

  • 3- to 4-pound beef brisket or chuck roast
  • 1 tablespoon vegetable oil
  • 1/3 cup soy sauce
  • 1-inch cube fresh ginger, peeled and sliced
  • 4 pieces star anise
  • 2 cups water
  • 3 cups cubed and peeled rutabaga or white turnip
  • 1/2 cup minced green onions
In a large Dutch oven, brown the meat in the oil until seared on all sides.


Combine soy sauce, ginger and star anise with water.
Pour over the meat.
Simmer for about 3 hours, turning once or twice and adding more water if necessary.
Remove star anise and add rutabaga or turnip.
Cover and cook for another 30 minutes.
Garnish with the green onions, and serve with white rice or mashed potatoes.

Makes 6 servings.
