Snickerdoodles

Ingredients:

1/2 cup butter, softened
1 cup plus 2 tablespoons sugar, divided
1 egg
1/2 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon cream of tartar
1 teaspoon ground cinnamon

Method:

1. In a large bowl, cream butter and 1 cup sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, baking soda and cream of tartar; gradually add to the creamed mixture and mix well. Place dough in the refrigerator and allow to chill for 1 hour.

2.In a small bowl, combine cinnamon and sugar. Place two baking sheets lined with parchment paper or nonstick baking mats into the fridge to chill.

2. Pre-heat oven to 350F. Shape dough into 1 inch balls; roll in cinnamon-sugar. Place 2 inches apart on baking sheets. Bake for 10-15 minutes or until lightly browned. Remove to wire racks to cool

Yields: 2-1/2 dozen
