Green Beans with Potato Salad

Origin: Lebanon


* Green beans
* Medium potatoes
* Small clove garlic
* Salt to taste
* Lemon juice
* Small onion, chopped
* Olive oil


Wash and snip ends of green beans and cut into 2" lengths. Cook in salted water until tender but crisp. Drain and cool. Boil potatoes until tender, cool and cut in 1" cubes. Mash garlic and salt. Add lemon juice, mixing well. Add potatoes, beans, onions, and oil. Toss well.

Note: May be prepared ahead of time for through blending of flavors.
