Date, Walnut, and Celery Salad

This light, refreshing salad is bursting with flavor and crunch. Walnuts give it that perfect nutty taste and really compliments the dates and celery. No dressing is required on this one, although a vinaigrette lightly drizzled over the salad would be delicious.


  • 4 cups baby spinach or mixed greens
  • 1 1/2 ribs celery, chopped into 1/4 inch pieces
  • 1/2 cup walnuts, toasted
  • 8 yellow dates, pitted and sliced
  • 1/4 cup crumbled feta cheese


In a small bowl, toss celery, walnuts, and dates until evenly mixed.

Place a layer of baby spinach or mixed greens onto a serving plate or bowl. Spread celery, walnut, and date mixture atop leaves.

Crumble feta cheese over top and serve immediately or refrigerate in an airtight, plastic container.

If using a dressing, such as a vinaigrette or olive oil, drizzle over salad just before serving.
