Apple Pie Cake


18 1/4 oz box yellow cake mix

1 tsp baking powder

3 egg whites -- whipped

20 oz can apple pie filling

1 tbsp oil

1 tsp cinnamon

1/2 tsp lemon extract

1/4 tsp nutmeg


1/4 c margarine -- cold

1/2 c granulated sugar

1/2 c unbleached flour

1 tsp cinnamon


Preheat oven at 350° F. Prepare a 13 x 9" pan with cooking spray and flour.

To prepare batter, combine cake mix and baking powder in a small mixing bowl.

In another mixing bowl, combine egg whites, apple pie filling, oil, cinnamon, lemon extract, and nutmeg. Mix dry ingredients with wet ingredients just until moistened.

Pour batter into prepared pan.

Meanwhile, to prepare topping, combine margarine, sugar, flour, and cinnamon in another mixing bowl. Blend with a pantry blender to make crumbs.

Sprinkle the crumbs over top of batter.

Bake about 35 minutes.
