Apple and Carrot Salad


  • 2 cups boiling water
  • 1 (6-ounce) package Jell-O Brand Lemon Flavor Gelatin
  • 1 1/2 cups cold apple juice or water

  • 1 medium apple, chopped
  • 1 medium carrot, shredded
1. Stir boiling water into dry gelatin mix in large bowl at least 2 minutes until completely dissolved. Stir in juice. Refrigerate 1 1/2 hours or until thickened (spoon drawn through leaves definite impression).

2. Stir in apples and carrots. Spoon into 5-cup mold sprayed with cooking spray. Refrigerate 4 hours or until firm. Unmold.

Makes 10 servings.

Great Substitute: Prepare as directed, substituting 2 (3.25-ounce each) packages Jell-O Brand Lemon Flavor Gelatin for the 1 (6-ounce) package.

How To Unmold Gelatin:

Dip mold in warm water for about 15 seconds. Gently pull gelatin from around edges with moist fingers. Place moistened serving plate on top of mold. Invert mold and plate; Holding mold and plate together, shake slightly to loosen. Gently remove mold and center gelatin on plate.
