A Nuns Sigh

Ingredients:

  • 1 Sifted all-purpose flour 1.00 c
  • 2 salt 1.00 pn
  • 3 Sugar 1.00 tb
  • 4 Water 1.00 c
  • 5 Butter 0.33 c
  • 6 Eggs 4.00
  • 7 Vanilla 1.00 ts
Recipe Preparation Instructions :


Fat for deep-fat frying Confectioner's sugar Sift together flour, salt and sugar and set aside. Heat water and butter together until butter melts. Add flour combination all at once, and stir rapidly with a wooden spoon until dough leaves sides of pan and forms a lump. Remove from heat and beat in the eggs, one at a time, beating hard after each addition. When dough is no longer slippery-lookin g, stir in vanilla. Scoop up a heaping teaspoon of the dough and, with a second teaspoon, push it off into preheated fat (350 degrees on a deep-fat thermometer or untl a 1-inch cube of bread browns in 60 seconds). When puffed and golden brown, drain on paper towels. Sprinkle with confectioner's sugar and serve hot. Makes several dozen.
