Tomato Salad
Ingredients:
- 6-8 large tomatoes
- 1/4 cup finely chopped parsley
- 1 1/2 tablespoons vinegar
- 4 tablespoons extra virgin olive oil
- salt and pepper to taste
Preparation:
Slice tomatoes 1/4 inch thick. Sprinkle parsley over tomatoes.
Mix together olive oil and vinegar. Drizzle over tomatoes. Add salt and pepper to taste. Serve immediately or chilled.
