- 2 lbs tri-color rotini pasta
- 1 pint cherry tomatoes
- 1 large cucumber, diced
- 1 medium red onion, finely chopped
- 1 medium bunch broccoli
- 1/4 cup black olives, sliced
- Feta cheese, crumbled, to taste
FOR THE DRESSING:
- 1 cup mayonnaise
- 1/2 cup olive oil
- 2 tablespoons mustard
- 3 cloves garlic, crushed
- salt and pepper to taste
While pasta is cooking, add ingredients for dressing to a medium bowl. Mix well to ensure all ingredients are thoroughly blended.
Wash and rinse vegetables, if necessary. Slice cherry tomatoes in half.
Once pasta is done, drain well, and place in a large serving bowl. Add vegetables and gently toss.
Pour dressing evenly over pasta and vegetables and mix gently, but well. Add crumbled feta cheese to taste and mix again.
Salad may be served warm or chilled.
