Kibbi Soup

Ingredients :

- 1/2 Basic Kibbi Recipe

- 1/4 cup Pine nuts

- 1 Onion, minced

- 7-8 cups Water

- 1 Cinnamon stick

- Salt and pepper to taste

- 1/2 cup Uncooked rice

- 1/2 cup Parsley, coarsely chopped

Preparation :

Form kibbi into walnut-sized balls. Make a whole in the center and place few pine nuts inside and close, Kibbi balls may be either fried or broiled. (They are best browned in butter or margarine.) Remove browned kibbi. Sauté onions lightly. Then add small amount of water to butter drippings. Pour drippings into large pan, add remaining water, seasonings, and rice. Cook for 20 minutes.

Add kibbi balls and simmer for 20 minutes or until kibbi and rice are done. The last 5 minutes add chopped parsley.
