Barley-Cherry Salad


  • 1 cup(s) pearl barley
  • 12 ounce(s) (about 3 cups) cherries, pitted and chopped
  • 3 stalk(s) celery
  • 1/4cup(s) chopped fresh mint leaves
  • 2 tablespoon(s) cider vinegar
  • 1/2teaspoon(s) salt


  1. Cook pearl barley as label directs. Drain, rinse until cool, and drain again.
  2. Toss barley with cherries, celery, fresh mint leaves, cider vinegar, and salt until mixed. Place in lettuce-lined bowl.
