500 g carrots, coarsly grated
200 g apples, peeled and coarsly grated
60 g almonds, toasted and chopped
2 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/2 teaspoon sugar
1 Mix all ingredients together.
2 Don't add salt, it would soak water!
3 Refrigerate at least one hour.
4 Serve and enjoy.
