Ingredients:
› 1½ cup of bulgur (cracked wheat)
› 1 chopped onion
› 2 tbsp tomato puree
› 1/3 cup virgin olive oil
›1¾ cups boiling water
› 1 finely chopped tomato
› 1 finely chopped cucumber
› ½ bunch of finely chopped fresh parsley and dill
› 2–3 leaves of finely chopped lettuce
› 1–2 chopped spring onions
› 1/3 cup lemon juice
› ½ tsp cumin
› 1 tsp dried mint
› 1 tbsp salt to taste
Preparation:
› Put the bulgur in a large bowl and add boiling water.
› Stir and leave bulgur for 5 to 10 minutes, so all the water is absorbed.
› Make sure that bulgur is not wet (the bulgur will swell to double the size.
› Put olive oil and onions in a frying pan, and sauté over medium heat.
› Add tomato paste and salt, sauté for 1 to 2 minutes, and then add to bulgur.
› Mix the ingredients using a wooden spoon.
› Add lemon juice, cumin, and dried mint.
› Mix and leave until it is cool.
› Finally, add tomato, cucumber, green onions, lettuce, parsley, and dill, then and mix them all.
› Garnish with lettuce.
