Egyptian Lemon and Garlic Potato Salad

My mother's recipe for a light, tasty potato salad.


Ingredients:

  • 2-1/2 pounds red potatoes
  • 1/2 cup chopped parsley
  • 1 clove garlic, minced
  • Juice of 2 lemons
  • 1 Tablespoon vegetable oil
  • Salt and pepper to taste

Boil potatoes, and cool. Add remaining ingredients and mix well. Chill and serve.
