Ingredients:
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup sugar
- 1 egg
- 1 tablespoon vanilla extract
- 2 cups dates, finely chopped
- 1 cup walnuts, finely chopped
- 1 cup boiling water
Preparation:
Preheat oven to 350 degrees and start water to boil.
In a mixing bowl combine flour, baking powder, salt, and sugar. Mix in egg and vanilla extract. Set aside.
In a large mixing bowl mix together dates and walnuts. Pour boiling water over date and nut mixture. Set aside.
Grease loaf pan with non-stick cooking spray or shortening.
Add dry ingredient mixture to date-nut mixture. Mix well. Spoon into loaf pan.
Bake for 55 minutes to 1 hour.
Cool for 15 minutes. Serve with your favorite coffee or tea.
