A cucumber with laban salad is refreshing change from traditional salads. Serve this as a brunch side dish or with dinner and your guests will be asking for more!

Ingredients:

  • 1 large cucumber, peeled and chopped
  • 2 cups plain yogurt
  • 1 teaspoon dried mint
  • 1/2 teaspoon salt

Preparation:

Combine yogurt and cucumbers. Add mint and salt. Stir well.

Refrigerate 2 hours prior to serving.

Cucumber laban can be used as a dip for kibbeh or even falafel.
