Ingredients:

125g butter
250 ml castor sugar
¼ cup oil
¼ cup milk
5ml vanilla essence
3 eggs
2 cups self raising flour
½ tsp baking powder
A few drops pink food colouring
A few drops green food colouring

Directions:

Cream butter and castor sugar together.

Add in rest of ingredients and mix well.

Divide batter into 3 batches. Colour one pink, one green and leave the other neutral.

Grease cup cake pans and drop a spoonful of each colour batter into each pan.

Bake until golden brown. Remove and leave to cool.

Syrup:

1 cup jam
100 ml water

Mix together jam and water until the jam is melted on a low heat

Dip cupcakes in the jam mixture and roll in coconut.
