1/3 c. mayonnaise or salad dressing
1 T. milk
2 1/4 tsp. prepared mustard
1 1/4 tsp. chopped chives
3/4 lb. fully cooked ham
1 (9 oz.) pkg. frozen peas, thawed
2 medium oranges, peeled and sectioned
1 1/2 c. leaf lettuce, torn
1/3 c. thinly sliced red pepper
For the dressing, in a small bowl combine mayonnaise, milk, mustard and chopped chives. Cover and refrigerate at least 30 minutes.
Cut ham into julienne strips; set aside.
In a large bowl combine ham, peas, orange sections, lettuce and thinly sliced red pepper.
To serve, spoon the dressing over salad; toss lightly.
Makes 4 servings.
